
Today we are making 3 No Bake Summer Desserts to beat the heat! They are all easy to make, perfectly sweet, and cooling. We will be making Frozen Smores, Banana Pudding, and Strawberry Crunch Cheesecake!


Frozen Smores
Ingredients
- 1 box instant chocolate pudding mix
- 2 1/2 cups milk
- 2 1/2 cups cool whip (frozen whipped topping)
- 24 graham crackers, broken in half
- 4 ounces cream cheese, softened
- 7 ounces marshmallow creme
- pinch salt
Instructions
- Line a 9×13 inch pan with parchment paper.
- Lay half the crackers down in the bottom of the pan.
- In a bowl, combine the milk, pudding mix, and 1/2 cup cool whip.
- Pour over the crackers, and freeze for about 1 hour.
- Combine the softened cream cheese, marshmallow creme, 2 cups of cool whip, and salt until smooth.
- Spread over the chilled pudding, and top with remaining crackers.
- Freeze at least 6 hours. Cut into squares and serve!


No Bake Banana Pudding
Ingredients
- 1 box instant vanilla pudding
- 3 cups whole milk
- 8 ounces cool whip
- 3-4 bananas, thinly sliced
- 1 box Nilla wafer cookies
Instructions
- Combine the pudding and cold milk in a bowl.
- Stir in 4 ounces of the cool whip until combined.
- In a 9×13 inch dish, place a layer of cookies on the bottom.
- Place a layer of bananas, followed by half the pudding mixture.
- Repeat the layers, adding more cookies, bananas, and the remaining pudding.
- Spread the other half of the cool whip on top, and garnish with more bananas and crushed cookies, if desired.
- Refrigerate for at least 2 hours-overnight is better!


No Bake Strawberry Crunch Cheesecake
Ingredients
- 24 golden Oreos
- 4 TBSP butter, melted
- 24 ounces cream cheese, softened 3 packages
- 2 cups powdered sugar
- 1 tsp lemon juice
- 1 cup strawberries, pureed
- 2 tsp vanilla extract
- 1 1/2 cups heavy cream
Strawberry Crumble Topping
- 1.2 ounces freeze dried strawberries
- 14.3 ounces golden Oreos
- 1/2 cup melted butter
Instructions
- In a food processor or blender, pulse the 24 cookies into crumbs. Mix with the butter.
- Press into a 9 inch spring form pan to form the crust. Freeze for 30 minutes to 1 hour.
- Mix the cream cheese, powdered sugar, and lemon juice with until well combined.
- Beat the heavy cream in a large bowl until it forms stiff peaks, about 5 minutes. Fold into the cream cheese mixture.
- Divide the mixture into 2 bowls, Add the pureed strawberries into one bowl.
- Pour the strawberry mixture into the crust. Layer the other layer on top.
- Freeze at least 4-5 hours. Cover with the strawberry crumbs all on the top and sides of the cake. Keep frozen until ready to serve.
Strawberry Crumb Topping
- In a food processor or blender, combine the dried strawberries, Oreos, and melted butter until it forms a crumbly texture. Keep refrigerated in an airtight container for up to 1 week.
