Ingredients

  • 4 filet mignons (or your preferred steak)
  • 8 ounces fresh mozzarella, sliced into 4 pieces
  • 1-2 tomatoes, sliced
  • bunch fresh basil
  • salt and pepper, for seasoning
  • balsamic glaze

Instructions

  • Allow steaks to sit at room temperature for 30 minutes. Preheat oven to 400 degrees.
  • Place a cast iron pan (or oven safe pan) over medium heat with a drizzle of oil. Allow to heat up for 2 minutes.
  • Season the steaks with salt and pepper. Cook in the hot skillet for about 2-3 minutes per side, or until they release from the pan and have a good crust on the outside.
  • Layer a slice of mozzarella, tomatoes, and basil on top of each steak. Place in the oven for 3-5 minutes, or until the desired temperature is reached. (140-145 degrees internally is medium).
  • Let rest for 5 minutes before serving. Drizzle with balsamic glaze.

Notes

To make these on the grill, cook the steaks about 2-3 minutes per side over direct heat. Layer the mozzarella, tomatoes, and basil on top, and move to indirect heat. Cover, and cook the additional time.
