Pecan Snowballs

Ingredients
  

  • 2 cups pecans
  • 1 cup butter, softened
  • 1/2 cup confectioners sugar
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1 cup confectioners sugar, for rolling

Instructions
 

  • In a food processor, or with a knife, chop up the pecans into very small pieces.
  • In the bowl of a stand mixer, cream together the butter, 1/2 cup confectioners sugar, and 1/3 cup sugar.
  • Add in the salt and vanilla, and mix until combined.
  • Stir in the flour, and then the pecans.
  • Wrap and chill for at least 1 hour.
  • Preheat oven to 350 degrees. Roll the dough into 1 1/2 inch balls, and place 1 inch apart on a baking sheet.
  • Bake for 15-18 minutes, or until puffed and slightly golden.
  • Let cool for 5 minutes on the sheet pan, and then roll in confectioners sugar.
  • Allow to cool on a wire rack.
