It is quick and easy to bake these shrimp, and you won’t believe how crunchy and tender they are. Topped with a sweet, creamy slaw on a warm, toasty roll.

Baked Shrimp Po Boys with Creamy Pineapple Slaw

Ingredients
- 1/2 cup mayo
- 1 teaspoon mustard
- 2 Tablespoons sugar
- 1 Tablespoon vinegar
- 1/2 teaspoon salt
- 2 cups coleslaw mix
- 1 cup chopped fresh pineapple
- 2 Tablespoons chopped chives
- 2 eggs
- 1/2 cup panko
- 2 Tablespoons Cajun seasoning
- 1 pound jumbo peeled and deveined shrimp
- 6 sub rolls
- 2 Tablespoons melted butter
- 1/2 teaspoon garlic powder
Directions
- Preheat the oven to 400 degrees F. 2. Combine the mayo, mustard, sugar, vinegar, and salt in a bowl. Stir in the coleslaw mix and pineapple. Refrigerate until ready to use. 3. Whisk together the eggs in a bowl. Combine the panko and Cajun seasoning on a plate.4. Dip the shrimp in the egg, then the panko mixture. 5. Place on a wire rack on a sheet pan. Spray the tops with oil. 6. Bake 7-9 minutes or until cooked and crispy. 7. Optional: Combine the butter and garlic in a small bowl and spread on sub rolls. Toast under the broiler for a minute until golden. 8. Add the shrimp and slaw to the rolls and serve.
