Prosciutto, Asparagus, & Gruyere Bundles | Easy and Elegant!

This recipe for Prosciutto, Asparagus, and Gruyere Bundles is so unbelievably easy, but is sure to impress. The asparagus gets perfectly tender, paired with the gooey melty cheese, salty prosciutto and crispy, flaky puff pastry; these little beauties are addicting! Perfect for holiday appetizers or brunch. You can also make them a vegetarian option by taking out the prosciutto and they are still incredibly delicious!

Prosciutto and Asparagus Bundles

Ingredients

  • 2 sheets puff pastry, thawed
  • 1 bunch of asparagus (at least 24 pieces)
  • 1 Tbsp. olive oil
  • salt and pepper to taste
  • 8 oz. gruyere cheese, shredded
  • 12 slices prosciutto
  • 1 egg, whisked

Directions

  1. Preheat the oven to 425 degrees F. Line 2 sheet pans with parchment. 2. In a large bowl, toss the asparagus with olive oil, salt and pepper. 3. Roll out the puff pastry sheets slightly, and cut each into 6 rectangles. 4. Turn each rectangle so its more of a diamond shape, and place a piece of prosciutto on each. Then, add 2 to 3 stalks of asparagus, along with 2 Tbsp. shredded gruyere. 5. Wrap each side of the pastry over the top and press the seams together to seal. 6. Brush with the egg wash. 7. Bake for 15-20 minutes, or until nice and golden brown. Best served warm (but still delicious even cold!).
