Sheet Pan Sausage, Peppers, and Polenta Cakes | Quick and Easy Meal!

Today we are making one of my family’s favorite meals: Sheet Pan Sausage, Peppers, and Polenta. This incredible meal is super quick and easy to make! It cooks all on one sheet pan in about 30 minutes. The polenta cakes kick this classic meal up a notch and makes a special dish that is sure to impress and become a new favorite!

Sheet Pan Sausage, Peppers, and Polenta Cakes

Ingredients

  • 2 bell peppers, cut into strips
  • 1 medium onion, cut into thin strips
  • 1 Tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon each salt and pepper
  • 1 pound tube heat and eat polenta, cut into 8 even rounds
  • 1 pound sausage links (we like mild Italian but you can use any kind you like!)
  • marinara sauce, for serving

Directions

  1. Combine the peppers and onions in a large bowl, and drizzle with olive oil. Add garlic powder, parsley, oregano, basil, and salt and pepper. Stir to combine. 2. Line a sheet pan with parchment paper, and preheat the oven to 425 degrees F. 3. Drizzle olive oil on the pan, and place polenta rounds evenly on one side. Drizzle with a little more oil and sprinkle a little garlic powder, oregano, and salt on top. 4.Add the sausages to the middle of the pan. 5. Add the onions and peppers to the other side of the pan, and around the sausage if needed. 6. Bake for 20 minutes, and flip the polenta cakes, sausage, and stir the vegetables. Return to the oven and cook an additional 10-15 minutes, or until the sausage is cooked to 165 degrees F internally. 7. Serve with warm marinara sauce, and enjoy!
