Monster Mac and Cheese

This Monster Mac and Cheese is beautifully green without any food coloring. The secret ingredient is spinach, which adds a beautiful, ghoulish green color and some veggies! Great for after a night of trick or treating!

Ingredients
  

  • 1 pound elbow macaroni, cooked to al dente
  • 4 cups baby spinach
  • 2 1/2 cups milk
  • 1/4 cup butter
  • 3 Tablespoons flour
  • 1 teaspoon garlic powder
  • salt and pepper, to taste
  • 1 cup white American cheese
  • 3 cups white cheddar cheese
  • 2/3 cup parmesan cheese

Instructions
 

  • In a blender, combine the spinach with 1 cup of the milk. (You may need to add the spinach in batches). Blend until smooth, but do not over blend or it will lose the bright green coloring.
  • In a pot over medium heat, melt the butter. Stir in the flour, garlic powder, salt and pepper. Pour in the remaining 1 1/2 cups milk, and spinach mixture.
  • Slowly add in all of the cheeses, stirring until melted.
  • Pour the sauce over the cooked pasta, and serve!

Notes

If making in advance, keep the cooked pasta and sauce separate.  When ready to serve, heat both and combine.
