In a small bowl, combine the warm water and sugar. Sprinkle the yeast on top, and let sit for 5 minutes, or until it begins to foam.
In a large bowl, combine the flour and salt. Make a well in the center and pour the yeast mixture in. Use a wooden spoon and stir until combined. It will be sticky!
Cover and let stand 5-6 hours, or until doubled and surface is dotted with bubbles.
Dust a surface with flour and, with floured hands, fold the dough over on itself 3 or 4 times, shaping into a round. (It will still be very sticky).
Grease a large bowl and place the round in. Cover and let rise another hour, or until doubled again.
Preheat the oven to 450 degrees with a large Dutch oven inside for 30 minutes.
Place the bread on a square of parchment paper, and carefully lower into the preheated pot. Cut an X in the top, if desired.
Cover, and bake 30 minutes. Remove the lid, and bake 15-20 minutes more, or until golden brown and crusty. (210 degrees internally). Remove and let cool.
