Pepperoni Pizza Popcorn
Ingredients
- 1 bag popped popcorn
- 1 bag mini pepperoni
- 1/2 cup parmesan cheese
- 1 TBSP paprika
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- crushed red pepper, to taste
Instructions
- In a skillet over medium heat, cook the mini pepperoni until crisp, about 5 minutes.
- In a small bowl, combine the parmesan, paprika, oregano, garlic powder, and onion powder.
- Pour the pepperoni over the popcorn. Sprinkle the cheese mixture on top. Toss to combine.
- Sprinkle crushed red pepper on top.


Philly Cheesesteak Sliders
Ingredients
- 1 1/2 pound sirloin or London broil
- salt and pepper
- 2 tsp oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 onion, diced
- 2 bell peppers, diced
- 3 TBSP mayo (or to taste)
- 12 slices provolone cheese
- 1 package King's Hawaiian rolls
- 1 TBSP butter
- sesame seeds
Instructions
- Preheat oven to 350 degrees.
- Freeze the steak for 30 minutes. Slice very thin.
- Season with salt, pepper, onion powder, and garlic powder. Toss to combine.
- In a large skillet over medium high heat, add a little oil. Cook the steak for about 2 minutes, or until cooked through. Set aside.
- Add the peppers and onions. Season with a little more salt.
- Cut the rolls right down the middle, leaving them all in tact.
- Spread mayo on the top and bottom. Place 6 slices of cheese on the bottom. Add the steak, then the peppers and onions. Place the remaining 6 slices of cheese on top. Place the tops of the rolls back on.
- Brush the tops with butter. Sprinkle with a little salt and sesame seeds.
- Bake for 10-15 minutes, or until toasted and the cheese is melted.


Buffalo Chicken Pizza
Ingredients
- 1 large pizza dough
- 1 cup cooked crispy chicken (I use popcorn chicken), cut in pieces
- 1/2 cup buffalo sauce or 2 TBSP butter melted with 1/2 cup hot sauce
- 1 cup shredded mozzarella
- 1/2 cup bleu cheese or ranch dressing
- green onions
Instructions
- Preheat oven to 450/500.
- Stretch out the pizza dough. Spread the bleu cheese on top, leaving a border for the crust.
- Sprinkle on the cheese.
- Toss the chicken in the buffalo sauce.
- Place on top of the pizza.
- Bake for 15-20 minutes. Drizzle more bleu cheese on top, and sprinkle with green onions.


Chicken Parm Rolls
Ingredients
- 4 frozen breaded chicken strips, baked and cut in half
- 1 tube crescent roll dough
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella
- 2 TBSP butter, melted
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- salt
- parmesan cheese
Instructions
- Preheat the oven to 375 degrees.
- Separate the crescent rolls into the 8 triangles. Place a piece of chicken on each.
- Top with a spoonful of marinara, and a sprinkle of cheese.
- Roll up and place on a parchment lined baking sheet.
- In a bowl, combine the melted butter with the garlic powder, Italian seasoning, and salt. Brush on top of the rolls.
- Bake for 10-12 minutes, or until golden brown.
- Sprinkle parmesan cheese on top.


Nashville Hot Mozzarella Sticks
Ingredients
- 1 pound part skim mozzarella cheese, cut into sticks
- 1 cup flour
- 1 tsp kosher salt
- 1 tsp paprika
- 1/2 tsp cayenne
- 2 large eggs
- 1 TBSP hot sauce
- 2 cups panko breadcrumbs
- oil, for frying
Hot Chili Oil
- 1/4 cup oil
- 2 TBSP cayenne
- 1 TBSP brown sugar
- 2 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- ranch, for serving
Instructions
- Freeze the mozzarella slices for at least 1 hour.
- On a plate, combine the flour, salt, paprika, and cayenne.
- In a bowl, mix together the eggs and hot sauce.
- Place panko on a separate plate.
- Dip the mozzarella in the flour, then eggs, then panko.
- Heat oil to 350 degrees. Fry about 1 minute per side, or until golden.
- To make the chili oil, combine the oil, cayenne, brown sugar, paprika, chili powder, garlic powder, and salt in a saucepan. Heat for just a few minutes to combine and melt the sugar.
- Brush on top of the hot mozzarella sticks. Serve with ranch.
