French Onion Soup
Ingredients
- 4 TBSP butter
- 5 large yellow onions, thinly sliced
- salt
- 1/2 tsp sugar
- 1 1/2 TBSP flour
- 1/2 cup dry white wine
- 4 cups beef stock
- 1/2 tsp dried thyme (or fresh thyme sprigs)
- black pepper
- 1/2 TBSP Worcestershire sauce
- French baguette, sliced
- 2 TBSP olive oil
- 2 1/2 cups gruyere cheese, shredded
Instructions
- Melt the butter in a large Dutch oven or stock pot over medium low heat. Add the onions, and sprinkle with salt and sugar.
- Cook on low, stirring occasionally, until golden brown and caramelized (about 45 minutes).
- Sprinkle on the flour. Stir for 30 seconds. Pour in the white wine and cook for a few minutes, deglazing the bottom of the pot.
- Stir in the beef broth, thyme, pepper, and Worcestershire.
- Simmer for 20 minutes.
- Meanwhile, drizzle baguette slices with olive oil on a baking sheet. Broil until golden brown, just a few minutes.
- Ladle the soup into oven safe bowls or crocks. Place a few pieces of bread on top. Sprinkle with gruyere cheese. Place under the broiler until bubbly.
- Sprinkle more thyme on top, if desired.
