Quick & Easy Cheesy Calzones

Today we are making my Quick and Easy Cheesy Calzones! We love making these for a fun family dinner because they are so customizable and everyone can create their own fillings. The crust is so crispy and golden brown with a rich, creamy cheesy filling. The ultimate comfort food!

Quick & Easy Cheesy Calzones

Ingredients

  • 2 large pizza doughs
  • 2 cups ricotta
  • 3-4 cups shredded mozzarella
  • 2 eggs (plus 1 for egg wash)
  • 1 cup parmesan cheese
  • 2 teaspoons each garlic powder, basil, oregano
  • salt and pepper to taste (1 teaspoon salt, 1/2 teaspoon pepper)
  • Any desired fillings

Directions

  1. Preheat oven to 400 degrees F. 2. Combine the ricotta, mozzarella, eggs, parmesan, and spices in a large bowl. 3. Divide each pizza dough in half and stretch out into rounds. 4. Place the ricotta filling on each pizza dough round and fold over. Crimp the edges. 5. Brush a whisked egg over the top of the calzones, and cut a few slits in the top of each. 6. Bake 20-25 minutes or until golden brown and bubbling. Let rest for at least 10 minutes before cutting (they will be HOT).
