Ingredients

  • 1 box red velvet cake mix, made according to package directions
  • 2 boxes white cake mix, made according to package directions
  • blue food coloring
  • 3 containers vanilla buttercream frosting
  • 2 (9 inch) cake pans
  • 6 inch cake pan

Directions

  1. Make the red velvet cake according to the package directions. 2. Grease the two 9 inch cake pans and 6 inch pan. Place a circle of parchment paper at the bottom of all of the pans. 3. Divide the batter between the pans, making them all as close to the same thickness as possible (they will be thin cakes). Bake for about 25-30 minutes, or until toothpick inserted in the center comes out clean. 4. Allow to cool in the pans for 10 minutes, and remove to cool completely on wire rack. 5. Do the same thing with one of the white box cake mixes. 6. With the second white cake mix, use blue food coloring to dye the cake batter to desired dark blue color. 7. Pour entire batter into one 9 inch cake pan (we want it to be double the thickness of the other cakes). Bake for 35-40 minutes, or until toothpick inserted in center comes out clean. 8. Once all cakes are cooled, use a serrated knife to even out each cake and make them level. 9. To assemble the cake, start with a white layer, add some frosting. Top with a red layer, frosting. Top with another white layer, frosting, following with the final large red layer, frosting. 10. Use a 6 inch circle of parchment paper and use as a guide to cut out the center of the blue cake. Place the blue cake on top of the red layer. Add the small 6 inch white cake to the center of the blue layer. Add frosting, and finally add the 6 inch red layer. 11. Frost the entire outside of the cake, and decorate as desired!
