These Italian beef cutlets are a staple in our household. Similar to chicken cutlets, they are super crispy, flavorful, and tender. They make a wonderful sandwich, but are also amazing with pasta, rice, potatoes….basically anything! They are very versatile, freeze well, and are super easy to make.

Ingredients
- 8 thinly sliced steaks (sandwich steaks)
- salt and pepper (to taste)
- 1/2 cup flour
- 2 large eggs
- 1 and 1/2 cups Italian breadcrumbs
- 2 Tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- vegetable oil, for frying
- lemons and fresh parsley, for serving
Directions
- To make the steaks extra tender, use a meat mallet tenderizer and gently pound. Season with salt and pepper (about 1/2 tsp. of each). 2. Place flour on a plate, whisk eggs in a bowl, and combine the breadcrumbs, garlic powder, parsley, and a little more salt and pepper on a separate dish. 3. Dip each steak in the flour, the eggs, then breadcrumb mixture. Place on a sheet pan. 4. Heat about 1 inch of oil in a skillet over medium heat (about 375 degrees). 5. Fry steaks about 3-4 minutes per side, or until golden brown. Place on a wire rack to drain. 6. Serve with lemon wedges and more fresh parsley!
