Quick & Easy Coconut Shrimp

Today we are making my quick and easy coconut shrimp! They are perfectly sweet with a super crunchy coating with tender, juicy shrimp. I love serving them as an appetizer, or for dinner with some rice and steamed broccoli. We love serving ours with sweet chili sauce for a bit of extra sweetness and spice!

Quick & Easy Coconut Shrimp

Ingredients

  • 1 pound jumbo shrimp, peeled and deveined, butterflied optional
  • 1/3 cup all purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon each salt and pepper
  • 2 large eggs
  • 1/2 cup panko breadcrumbs
  • 1 and 1/2 cups sweetened coconut flakes
  • vegetable oil, for frying
  • sweet chili sauce, for serving

Directions

  1. On a large plate, combine the flour, garlic powder, salt and pepper. 2. Whisk the eggs together in a bowl. 3. Combine the panko and coconut flakes on a second large plate. 4. Dredge the shrimp in the flour, then eggs, and finally the coconut mixture. Set aside on a dish. 5. Heat about 2 inches of vegetable oil to 375 degrees F. in a large skillet or pot. Fry the shrimp in batches for about 2-3 minutes per side, or until golden brown. 6. Serve with chili sauce for dipping.
