2 1/2poundssweet potatoes, peeled and cubed into 1/2 inch pieces
1/4cupbutter
1/2cupbrown sugar
1/4cupmaple syrup
1tspcinnamon
pinchnutmeg
1tspvanilla extract
mini marshmallows (optional)
Instructions
In a saucepan over medium heat, melt the butter. Whisk in the brown sugar, maple syrup, cinnamon, and nutmeg. Cook for a few minutes, or until sugar is dissolved.
Turn off the heat and stir in the vanilla.
Pour over the sweet potatoes and stir to combine.
Pour in a greased slow cooker. Cook on low 6-8 hours, or high for 4-5 hours. Stir about every hour.
Mash, if desired. Add marshmallows on top and cover for a few minutes, or until melted. (You can use a brulee torch to brown the marshmallows if you'd like).
