Slow Cooker French Dip Sandwiches

Ingredients
  

  • 2 pounds chuck roast or sirloin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 Tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 Tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cups beef broth
  • 3 cloves garlic, minced
  • 2 Tablespoons Worcestershire sauce
  • 1 Tablespoon fresh thyme
  • 2 teaspoons cornstarch
  • 1 teaspoon water
  • 6-12 slices provolone cheese
  • 6 crusty rolls

Garlic Butter

  • 3 Tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh parsley

Instructions
 

  • In a small bowl, combine the salt, pepper, brown sugar, paprika, and garlic with oil. Rub all over the beef,.
  • Place the onions in the bottom of a slow cooker. Place the beef on top.
  • Pour in the broth, Worcestershire, and thyme. Cook on low for 7-8 hours.
  • Remove the beef and onions, cover with foil to keep warm.
  • Strain the liquid into a small pot. Bring to a boil until reduced slightly, about 5 minutes.
  • Combine the cornstarch and water. Pour into the pot and cook an additional minute, or until slightly thickened.
  • Combine the garlic butter ingredients, and brush on rolls. Place under broiler for about 3 minutes, or until golden brown.
  • Shred the beef, and assemble sandwiches with provolone cheese.
  • Serve with jus on the side to dip in.
