Jam and Goat Cheese Pinwheels

Ingredients
  

  • 1 puff pastry sheet, thawed
  • 1/2 cup jam or preserves (fig or raspberry is my favorite)
  • 4 ounces goat cheese
  • 2 Tablespoons brown sugar
  • 4 sprigs fresh thyme
  • 1 egg, whisked

Instructions
 

  • Spread the jam on the puff pastry sheet, leaving a 1 inch border.
  • Sprinkle on goat cheese, brown sugar, and half the fresh thyme.
  • Roll up into a log, and wrap with parchment or plastic wrap. Freeze for 30 minutes to firm up.
  • Preheat oven to 400 degrees.
  • Slice into 1/2 inch rounds, and place on parchment lined baking sheet. Brush tops with egg wash.
  • Bake for 15-20 minutes, or until golden brown and bubbling.
