Chicken and Wild Rice Soup

Ingredients
  

  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 2 cups water
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • salt and pepper
  • 2 cups shredded cooked chicken
  • 2 cups milk
  • 1/2 cup flour
  • 4.3 ounce Long Grain& Wild Rice box

Instructions
 

  • In a large pot over medium heat with a drizzle of oil, stir in the carrots, celery, and onions. Cook until softened, about 5-7 minutes.
  • Add garlic, and cook an additional minute. Stir in the stock, water, and spices.
  • Stir in the chicken, and simmer for 15 minutes.
  • Whisk together the milk and flour. Stir into the soup.
  • Place rice and seasoning packet into the soup. Simmer for 20 more minutes, or until rice is cooked.
  • Garnish with scallions.
