Kona Café’s Tonga Toast Recipe

Disney’s Polynesian Resort is easily one of my favorite places to grab a bite to eat, and this Tonga Toast is on the top of the list! It is stuffed banana toast that is battered, deep fried and rolled in cinnamon sugar. It can’t get much better than that! My mouth is watering just talking about it!

Ingredients

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon cinnamon
  • 1 /2 Tablespoon granulated sugar
  • 4 thick slices of bread
  • 1 banana
  • oil for frying (about 2 inches in a deep skillet)
  • warm maple syrup, for serving

Directions

Combine the 1/2 cup sugar and 1 teaspoon of cinnamon on a plate or wide bowl. Set aside. In a large bowl, whisk together the eggs, milk, 1/2 teaspoon of cinnamon, and 1/2 Tablespoon of sugar. Cut each banana in half crosswise, then again lengthwise so you have 4 pieces. Rip a little bit of the bread out of the center of 2 slices of bread, making sure not to rip through the bread. This makes some room for the banana to nestle into! Place 2 banana slices on each hollowed out bread, and top with the remaining bread slices to make a sandwich.
  • Preheat the oil in a deep skillet to 350 degrees. Dip the sandwiches into the egg batter, fully coating all sides, and place gently into the hot oil. Fry about 3 minutes per side, or until golden brown and crispy. Immediately roll the toast in the cinnamon sugar mixture. Serve with some warm maple syrup and your favorite cup of coffee (or tea)!
