New York Style Crumb Cake
Ingredients
- 1 cup sugar
- 12 Tablespoons butter, room temperature
- 3 eggs
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup buttermilk or mix 1/2 tsp. lemon juice in plain milk
Crumb Topping
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 Tablespoon cinnamon
- 1/2 teaspoon salt
- 2 sticks butter, melted
- 2 1/2 cups flour
- powdered sugar, for dusting
Instructions
- Preheat oven to 325 degrees. Line a 9×13 inch pan with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs and vanilla.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Alternate mixing the dry mix and milk into the wet ingredients, until fully incorporated. Scrape the sides and bottom of the bowl and mix again.
- Spread batter into prepared pan. Bake for 15-20 minutes, or until the top is slightly set.
- To Make the Crumb Topping: Whisk together the sugars, cinnamon, salt, and melted butter. Add in the flour, and stir until a thick batter/paste is formed.
- Take the par baked cake out of the oven, and crumble the topping all over, starting at the edges and working your way to the center.
- Bake an additional 20-25 minutes, or until a toothpick inserted in the center comes out clean, and crumb topping is golden.
- Allow the cake to cool, and dust with powdered sugar.
