This New York Style Crumb Cake is inspired by the wonderful bakeries all over New York. A soft, tender vanilla cake topped with rich, crunchy crumble and lots of sweet powdered sugar. Perfect with a hot cup of coffee on a cold Winter morning!

New York Style Crumb Cake

Ingredients
  

  • 1 cup sugar
  • 12 Tablespoons butter, room temperature
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup buttermilk or mix 1/2 tsp. lemon juice in plain milk

Crumb Topping

  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon salt
  • 2 sticks butter, melted
  • 2 1/2 cups flour
  • powdered sugar, for dusting

Instructions
 

  • Preheat oven to 325 degrees. Line a 9×13 inch pan with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs and vanilla.
  • In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  • Alternate mixing the dry mix and milk into the wet ingredients, until fully incorporated. Scrape the sides and bottom of the bowl and mix again.
  • Spread batter into prepared pan. Bake for 15-20 minutes, or until the top is slightly set.
  • To Make the Crumb Topping: Whisk together the sugars, cinnamon, salt, and melted butter. Add in the flour, and stir until a thick batter/paste is formed.
  • Take the par baked cake out of the oven, and crumble the topping all over, starting at the edges and working your way to the center.
  • Bake an additional 20-25 minutes, or until a toothpick inserted in the center comes out clean, and crumb topping is golden.
  • Allow the cake to cool, and dust with powdered sugar.
